A small plot (1 hectare), located in Santa María de Dota, San José, Costa Rica. It is located at 2000 masl, it is a new plantation (6 years old), planted with the Typica Mejorado variety. It is a broken and drained terrain because the land has many rocks.
This batch was done as an anaerobic process, which consists of allowing the coffee bean to rest in containers, which are hermetically sealed to prevent the entry of oxygen. After 4 days the coffee is removed from the containers and immediately pulped and dried in the sun.
The coffee is collected in summer with the help of Panamanians; only the mature grains are collected which are given a differentiated process and it is sun dried in African beds, they are found in greenhouses at 2100 meters above sea level.
